One tank is fermented with a champagne yeast to capture the juicy red Grenache fruits whereas the other tank is fermented with a yeast selected to enhance the blood orange characters. The Graciano is wild fermented in  well seasoned puncheons to build on the inherent savoury notes. The Graciano’s naturally high acidity provides a counterpoint to the Grenache’s juicy red fruits.
